(CORMÒNS – GORIZIA) The Cantina Produttori di Cormòns is a historic cooperative winery from the Friulian Collio that combines tradition and sustainability, enhancing indigenous grape varieties within a virtuous model of collective viticulture.
History of Cantina Produttori di Cormòns

Founded in the late 1960s, the Cantina Produttori di Cormòns is one of the most established cooperative wineries in Friuli Venezia Giulia. The project was initiated by a group of local winegrowers determined to protect the region’s viticultural heritage and promote high-quality production, based on collaboration, territorial roots, and shared knowledge. The winery developed in the heart of the Collio Goriziano, a borderland between the Latin and Central European worlds, historically suited to precision viticulture.
Today, the cooperative counts 90 contributing members, who collectively farm around 320 hectares of vineyards, distributed across the region’s main appellations: Collio DOC, Friuli DOC, Friuli Isonzo DOC, and Colli Orientali del Friuli DOC. Annual production reaches approximately 2,250,000 bottles.
Since 2019, under the leadership of Alessandro Dal Zovo, the winery has embarked on a renewal process that has strengthened its bond with native grape varieties, while also updating its brand identity and communication strategy. This effort has helped make the cooperative a model of balance between tradition and modernity within the Collio area.
Winemaking Philosophy of Cantina Produttori di Cormòns

Since 1980, the Cantina Produttori di Cormòns has adopted agronomic practices focused on environmental sustainability and the protection of both growers’ and consumers’ health, anticipating many of the issues that are now central to the viticultural debate. The entire production follows the principles of integrated pest management, supported by an efficient in-house technical assistance service.
The plant protection system is based on the use of eight strategically positioned weather stations across the area, which allow for real-time monitoring of vine diseases such as downy mildew. This approach enables members to intervene only when strictly necessary, reducing the number of treatments and minimizing the environmental impact.
The cooperative centralizes the purchase and distribution of plant protection products, selecting low-impact active ingredients. Members receive continuous updates through technical bulletins, regular meetings, and the Field Logbook, which serves as a shared agronomic diary. All of these tools contribute to a transparent and coordinated supply chain, with constant monitoring of quality and technical developments.
Terroir of Cantina Produttori di Cormòns

The strength of the Cantina Produttori di Cormòns lies in the diversity of its vineyards, which span areas with very different geological compositions. In the Collio, soils made up of marl and sandstone from the Flysch formation lend finesse and ageing potential to the whites, while the vineyards of the Isonzo plain, with their alluvial origin, are more suited to wines with a fruit-forward and immediate profile. The Colli Orientali, on the other hand, offer slopes, altitude, and calcareous-marl soils that are ideal for both white and red varieties with excellent evolutionary potential.
This pedoclimatic diversity allows the winery to precisely manage the relationship between grape variety and environment, enhancing the expressive potential of each cultivar according to its specific context.
Wines of Cantina Produttori di Cormòns

The product range is broad and well-structured. The Collio line enhances the identity of the individual varieties grown within the appellation, including Friulano, Sauvignon, Pinot Bianco, Pinot Grigio, Chardonnay, Ribolla Gialla, Merlot, Cabernet Franc, and Pinot Nero, with single-varietal vinifications focused on clarity of expression and territorial authenticity.
The Selezioni line includes some of the winery’s most representative projects. The Collio Bianco da Uve Autoctone is a blend of Friulano, Ribolla Gialla, and Malvasia Istriana—an identity-driven synthesis that aims to capture the essence of Collio in a single bottle. This is followed by Melograno, a red wine made from Merlot and Cabernet, and Harmo, a white wine based on Malvasia from the plains vineyards.
The production is completed by wines from the Collio DOC and Friuli Isonzo DOC, along with a selection of Prosecco DOC.
Collio Bianco 2022 – Produttori di Cormons

The aromatic bouquet stands out for its freshness and complexity, with notes of elderflower interwoven with hints of crisp white-fleshed fruit and a subtle touch of salinity. On the palate, the wine is balanced, with a well-defined sapidity and a pleasant acidity leading to a refined, persistent finish with the classic note of almond.
The grapes are destemmed and undergo a long, low-temperature maceration in refrigerated pneumatic presses, a process designed to extract beneficial antioxidant compounds from the skins. Fermentation takes place at controlled temperatures to preserve the varietal aromas. The wine ages for 16 months on the lees in large oval oak casks, made from three different wood types, adding to its complexity and depth.
The Cantina Produttori di Cormòns, under the guidance of director Alessandro Dal Zovo, represents a model of cooperative winemaking in the Collio area. This Collio Bianco embodies an ambitious and contemporary style, fully earning its place among the most distinctive and original expressions of Friuli Venezia Giulia.
