MACERATED WINES FROM COLLIO
Macerated white wines, also known as orange wines, are at the heart of a winemaking debate that intertwines history, tradition, and contemporary trends. This technique, which involves leaving the skins in contact with the must during fermentation, was standard until the mid-20th century when white winemaking was much closer to red winemaking. The result was robust wines with a marked oxidative character and a more pronounced tannic structure, but often lacking freshness and finesse.
Starting in the 1970s, a radical change occurred in white winemaking. Modern techniques such as static clarification of the musts and temperature control allowed the production of clean, fresh wines that could precisely express the varietal and territorial characters. This approach proved particularly effective in enhancing the typicity of native grapes, leading to greater aromatic purity and a more recognizable taste profile.
In the 1990s, some Collio producers (especially in the Oslavia area) and Slovenian Karst winemakers, inspired by Georgian traditions involving qvevris, began to revive the maceration practice. The idea was to create more complex wines with a tannic structure that would broaden the food pairing possibilities. The most used varieties, such as Ribolla Gialla, Malvasia, and Vitovska, were fermented with extended macerations, often for weeks, and aged in amphorae or barrels.
