Castelli & Speerli
Description:
Castelli & Speerli was born as an innovative project in the heart of Tuscany, combining local winemaking tradition with a modern and sustainable entrepreneurial vision. The company aims to reinterpret the pleasure of wine in a conscious way, focusing on quality and respect for the consumer.
Founded by Simone Castelli, a third-generation winemaker from Maremma, and Heinz Speerli, a Swiss entrepreneur with international experience, the company offers organic, vegan, and low-alcohol wines designed to be enjoyed on any occasion without compromising wellness and gastronomic versatility, from aperitifs to light or plant-based cuisine.
Philosophy: Light and Sustainable Wine

The philosophy of Castelli & Speerli is based on three fundamental principles: joy, health, and respect. The company promotes “light wines,” which offer the full pleasure of wine with an alcohol content below 10%, allowing a bottle to be shared during a meal without exceeding the legal driving limit of 0.5‰.
Working in the low-alc segment (around 10% ABV), Castelli & Speerli wines offer approximately 25% fewer calories compared to a traditional wine, providing benefits in terms of digestibility and lightness. In addition, a dedicated breathalyzer (available on the company website) allows you to check if you are below the 0.5‰ legal limit for driving, providing a practical tool for responsible and safe consumption.
This choice responds to the growing consumer attention to health and sustainability, without sacrificing the quality and typicality of Tuscan wine, positioning Castelli & Speerli among the leading producers of dealcoholized wines in Italy.
Castelli & Speerli wines are versatile and suitable for many gastronomic pairings: perfect at the table with light or vegetarian dishes, as an aperitif, or to accompany meals on the go, always maintaining balance and finesse, enhancing every moment of conviviality.
Dealcoholization Method: Quality Without Compromise
A distinctive feature of Castelli & Speerli’s production is the physical dealcoholization method, applied immediately after fermentation. This innovative process reduces the alcohol content of wines by a maximum of 2 percentage points while preserving the aroma, color, structure, and organoleptic characteristics of the original product.
The process is based on membrane filtration: ethanol molecules selectively migrate into an extracting fluid, usually pure water, without the use of chemicals. Dealcoholization occurs at room temperature and very low pressure, avoiding any thermal alteration and preserving the character and personality typical of traditional wine, with a final alcohol content of around 9.5%.
Additionally, the company adopts natural winemaking practices without chemical additives, ensuring authentic wines that respect quality and sustainability.
Castelli & Speerli wines are also certified organic, vegan, and zero-residue, offering a clean, natural product suitable for health-conscious and sustainability-minded consumers.
Castelli & Speerli Wines: Expression of Territory and Lightness

The star grape of Castelli & Speerli wines is Sangiovese, a native Tuscan variety grown at Podere 414, located in the heart of Maremma. Thanks to its versatility, Sangiovese allows for the production of three light, original wines that pair easily with a wide range of dishes:
Rossolieve: a lively and harmonious red wine with an intense aroma of red fruits. Ideal with red meats, aged cheeses, pasta with meat sauces, but also with vegetarian dishes or light grilled foods. With an alcohol content of 10.5%, it is perfect for a barbecue or pizza with friends.
Volteggio: a light rosé with a pale pink color and aromas of white and yellow-fleshed fruits. Excellent as an aperitif, with fish dishes, ethnic cuisine, gourmet street food, or salads and vegetarian dishes. With an alcohol content of 10%, it is ideal for any sharing occasion.
Gioco: a light white wine with a pale straw color and fruity notes of peach and apricot. Perfect for aperitifs, light starters, vegetarian dishes, and vegan cuisine. With an alcohol content of 10%, it is a fresh and enjoyable choice for any occasion.
