Trento Dosaggio Zero Oro Rosso Cembra 2018 – La Vis Cembra

Description:

Classic-method sparkling wine with a straw-yellow color and fine perlage. Aromas of ripe yellow fruit, barley, and pastry; on the palate it is fresh, sapid, and vertical, with good persistence.

Vinification:

The 100% Chardonnay grapes come from vineyards at 600–750 m. After hand-harvesting, the must undergoes gentle pressing, fermentation in stainless steel at 18 °C, and 6 months aging on fine lees, followed by at least 48 months in bottle on the lees.

Grapes:

• 100% Chardonnay – south and southwest exposure, on well-drained soils of porphyry origin.

Trento DOC, whose success is inextricably linked to the visionary intuition of entrepreneur Giulio Ferrari, is among the most iconic Italian sparkling wines. The wine, born in the early 1900s thanks to Cantine Ferrari, gained recognition over time and was awarded the prestigious DOC status in 1993. Trento DOC is therefore recognized as the first traditional method DOC sparkling wine in Italy.

Trento DOC is produced in the province of Trento, within an area of 800 hectares. The permitted grape varieties are Chardonnay, Pinot Bianco, Pinot Nero, and Pinot Meunier, although most wineries focus primarily on Chardonnay and Pinot Nero. According to regulations, the wine must age on the lees for at least 15 months in the standard version, and 36 months for Riserva.

TRENTO DOC FOOD PAIRINGS

Trento DOC sparkling wines are versatile and refined, perfect from aperitif to dishes of varying complexity.

Thanks to their effervescence and marked acidity, they cleanse the palate by balancing richness and fat. They pair well with delicate seafood dishes such as salmon trout carpaccio, raw langoustines, or seared scallops, as well as with lightly fried foods.

Among regional dishes, they shine with canederli in melted butter, oven-baked trout with aromatic herbs, and a refined saffron risotto with prawns finished with lard, where the creaminess and savoriness are perfectly balanced by the freshness of the sparkling wine.

An elegant pairing with egg is slow-cooked egg with Parmesan cream and white truffle, whose aromatic complexity pairs wonderfully with Trento DOC.

Finally, they are ideal with semi-aged or bloomy rind local cheeses, such as Puzzone di Moena or Vezzena, where the effervescence balances saltiness and richness.
