It has a concentrated ruby red color, a wide, penetrating and long nose with hints of undergrowth, cherry and blackberries, all balanced by returns of spicy notes of vanilla and balsamic and oriental spices. On the palate it is velvety with an interesting soft but persistent tannic texture. Ferment in cement containers with long maceration on the skins, 25 days. The pressing is carried out with an ancient wooden press. Malolactic fermentation is spontaneous and carried out entirely in cement. Refine 45 months in cement, 6 months in cask, 6 months in bottle.
